This beans salad is a great combination of veggies and legumes. You get to eat raw, fresh veggies, rich with vitamins and minerals, and also legumes that contain lots of protein. So you enjoy both worlds AND an amazing taste of freshness!
This salad makes a meal by itself as it’s very satisfying and delicious. You can be creative with it and add other leafy greens such as kale or arugula, or use any other legumes that you like.
What you need:
1 cup of cooked white beans (kidney beans are great). You may use caned beans or – better – soak dry beans for couple of hours and then cook them until soft)
2-3 ripe vine tomatoes (but any other tomatoes will do too), chopped to cubes
Small purple onion, chopped
1 Handfull coriander, chopped
Juice from 1 fresh lemon
Salt to taste
What to do:
Very simple: mix all the ingredients in a ball and serve fresh!
