Mushrooms are one of my favourite foods from my childhood days, when I used to pick them with my parents at the forest. I remember well the rainy nights, when my father used to tell me: tomorrow morning all the best fresh mushrooms will appear like a magic below the trees, and we are going to get them!
With a child excitement, I picked the little button mushrooms between the tall trees, enjoy their light beige color and smooth touch. My parents taught me how to be very careful when picking a mushrooms, as some of them could be deadly if eaten.
When we got home, my father used to slice the mushrooms and fry them with a very basic sauce of olive oil, salt and black pepper. It was a treat! Sometimes he added them to an omelet, but this belongs to my pre-vegan life today I may try them one day with a vegan omelet, but that’s for another post…
The next recipe is for a very simple, easy to make and super delicious mushrooms!
What you need:
* 1 pack of whole button mushrooms (you don’t cut them)
* Dried Thyme leaves
* 1 spoon olive oil
* Salt and pepper to taste
What you do:
Warm the olive oil in a wide pot and add the rest of the ingredients. Leave on medium heat for about 10 minutes; stir occasionally.
Serve hot; great near rice or by itself.
